The role

As Sous Chef for the boohoo group, you will be part of the Manchester PLT kitchen team assisting in food preparation & cooking, creating and adhering to food specifications, uploading deliveries to the kitchen, carrying out daily cleaning tasks and trained to cover other responsibilities carried out by the wider chef across all Manchester locations. This is an exciting opportunity to join our department at a pivotal time as we expand across more locations within the city. Previous experience is essential. This is a new site for us at Pretty Little Thing so an extremely exciting time to join us.

Desirable hospitality hours, working no evenings or weekends!

Mon - Fri, 07:00-15:00

All locations are accessible by public transport and a driving license is not essential for this role.

What you'll be doing

  • Assist the Head Chef in all food preparation, cooking & service including but not exclusive to a full breakfast and lunch service, daily hot specials, buffets and ‘grab & go’ fresh food products.
  • In the head chef’s absence you are directly accountable for all food production and catering at the scheduled office, and must support the wider food & beverage, and facilities teams across the boohoo group.
  • Co-manage food specifications, recipe templates and ingredient costings alongside senior F&B team consistent with subsidy levels set and within GP guidelines provided.
  • Execute menus to boohoo kitchen standards of performance in line with business expectations that adapt to the ever-changing needs of our demographic of colleagues.
  • Ensure dishes are consistent, production is efficient and quality control carried out at every stage right through from ordering produce, managing deliveries, storing foods, prepping, cooking, auditing and presenting to service.
  • Ensure that all administration of food safety and due diligence; in respect of statutory and legal requirements is met by the business to maintain five star food hygiene records. Ensuring temperature records, SFBB and food labelling are maintained and up to date and comply with Natasha’s law October 2021 for all PPDS, Calorie labelling in the out of home sector April 2022 and FSA allergen regulations ‘FIR 2013’
  • Instruct the team in the safety methods, preparation, cooking, portion control and presentation of food and have the capability to produce food to a high standard in large volumes whilst maintaining quality and hygiene.
  • Strong communication with the wider team is essential for effective co-management of the facilities and the candidate must have a basic knowledge of word, excel, outlook & power point.
  • The role will require a level of decision making to ensure smooth and safe running of business operations.
  • The role involves constant change therefore, the ability to seek continuous improvement, anticipate and manage continuous change is essential.
  • The candidate should encourage constructive feedback and modify their communication style to achieve best results.
  • The role holder requires a thorough understanding of the regulatory and legal environment pertaining to food safety, hygiene practises and facilities management.
  • The services operated by the role holder affect all colleagues at group head office and are required from 7am – 3pm Monday – Friday with the flexibility to cover until 4/4.30pm in the chefs’ absence to ensure effective and continuous management.
  • Inspect supplies, equipment, and work areas to ensure conformance to established standards.
  • Opening and closing procedures must be followed, and documented daily and food hygiene standards maintained or improved.
