The role

As Commis Chef (North) for the boohoo group, you will be part of the Manchester boohoo kitchen team assisting in food preparation & cooking, uploading deliveries to the kitchen, carrying out daily cleaning tasks and trained to cover other responsibilities carried out by the wider chef across all Manchester locations. This is an exciting opportunity to join our department at a pivotal time as we expand across more locations within the city. Basic kitchen experience is necessary but training will be provided on the job.

Desirable hospitality hours, working no evenings or weekends!

All locations are accessible by public transport and a driving license is not essential for this role.

What you'll be doing

  • Assist the Head Chef in all food preparation, cooking & service including but not exclusive to a full breakfast and lunch service, daily hot specials, buffets and ‘grab & go’ fresh food products.
  • Ensuring all pots, pans, plates and cutlery are returned to the kitchen, washed effectively and returned to their place promptly and thoroughly in an organised fashion that will free up storage space.
  • Checking in deliveries alongside the chef, monitoring the incoming of goods is correct and that there has been no damage on delivery.
  • Storing all goods away in their place in a safe manner with labels on view at all times. Taking care to put away any frozen goods efficiently.
  • Breaking down all cardboard and disposing of it into the paper recycling bins as designated
  • All food waste to be recycled in to the green bins and removed at the end of the day into the larger food waste container off site
  • All general waste to be disposed of periodically throughout the day and removed at frequent intervals into the designated bins
  • Following your cleaning schedule to ensure all walls, sides, floors and appliances are washed and disinfected following our ‘effective cleaning’ guidelines. Larger tasks will be assisted by the team.
  • Demonstrate a duty of care by working within the health and safety and food safety act 1990 and subsequent regulations and to follow any instructions on hygiene given by your manager
  • Ensure all practise complies with the new FSA allergen regulations ‘FIR 2013’

Training & Development

You will receive on-the-job training to;

  • Create and follow food specifications and recipe templates to maintain consistency, achieve brand standards and ensure compliance with Natasha’s Law and the calorie law in the out of home sector 2022.
  • Build the skills to cover the sous chef in his/her absence including the creating, preparing & cooking of our weekly menu’s to the standard as set, and completing the correlating daily ordering and stock management.
  • Carry out HACCP checks, ensure temperature records, SFBB and food labelling are maintained and up to date in the head chefs absence whether by yourself or working alongside agency cover.
  • Ensure the kitchen is clean and hygienic, making sure cleaning rotas are adhered to and records kept maintaining COSHH date in the head chefs’ absence whether by yourself or working alongside agency cover.
  • Opening and closing procedures must be followed and documented daily, as a result the kitchen and counter area are expected to be in a presentable fashion.
  • Inspect supplies, equipment, and work areas to ensure conformance to established standards.
  • Monitor the cost of all waste, including supervision of the front of house wastage. You will carry out weekly waste report and set targets with the head chef and catering & hospitality manager to reduce our overall loss.
  • You will work alongside the supervisor in the head chefs’ absence to instruct the team in the preparation, portion control and presentation of the lunch offerings, daily fillings and grab & go items.
  • Have the ability to produce foods to a high standard in large volumes whilst maintaining quality and hygiene.
  • Display commitment to outstanding customer service
  • Will be trained to be fully aware of the fire, emergency and health & safety procedures of the workplace
  • Will ensure that all potential and real hazards are taken care of immediately, and are reported appropriately.
  • Works in a safe and responsible manner, within the framework of legislation and workplace specific policies.
